Directions:
Heat oil in large pot, add the chopped onion, garlic and minced beef and cook over fairly high heat until browned. Dice the celery (can use capsicum if in season) and add it to the pot with the spices and cook for a further 2 minutes. (For large quantities, do this in a large frypan or bratpan, then transfer the mix to a pot).
Reduce the heat, add the diced canned tomatoes and simmer for about 10-15 mins until liquid has reduced, stirring occasionally to prevent sticking. [If making this for more than 10 people, add approx 2/3s of the canned tomatoes to start with and cook until reduced, then decide if more tomatoes should be added, to avoid it going watery].
15 mins before serving add the chilli beans (including their liquid), stir through and heat.
Serve the remaining ingredients on the side. |
