Pinwheel scones and filling - sweet (DF/vegan) |

| | | Ingredients: | | 1.50 c | flour   | 3.00 tsp | baking powder GF   | 0.13 tsp | salt   | 55.00 g | coconut oil   | 0.75 c | soy milk   | 0.50 tsp | cinnamon   | 1.00 tbsp | brown sugar   | |
Directions:
1. Sift flour, baking powder and salt into a bowl.
2. Cut in 37g of coconut oil until it resembles fine breadcrumbs.
3. Add soymilk and mix quickly with a knife to a soft dough.
4. Knead a few times on a floured board, and divide into two. For each half, roll into a 1 cm thick rectangle.
5. Melt the rest of the coconut oil and spread it over rolled out dough. Mix cinnamon and brown sugar together and spread on top of melted dairy-free spread.
6. Roll up each rectangle into a log. Slice 2 cm thick and place 2 cm apart on oven tray. Bake 10-15 minutes until bottom is lightly browned. |
