Directions:
Oven 200 degrees.
Boil or microwave potatoes until tender. Slice. Chop and saute red onion until transparent. Add baby spinach and wilt.
Beat eggs and cream together. Add crumbled feta, nutmeg and pepper. Mix in potatoes, onion and spinach.
Pour into greased baking dish and sprinkle with grated cheese.Bake until golden and cooked. |
