Directions:
Preheat oven to 200 deg C. Line or spray muffin tins
In a large bowl, mix together flour, BP, salt, cinnamon until well combined.
In another bowl, whisk eggs and sugar until combined. Add Milk, oil, vanilla and mix well.
Fold wet ingredients into dry and mix together. Avoid overmixing. The mixture will be thick and lumpy. Fold in blackcurrants/blueberries.
Put into muffin tins- fill to the top. Sprinkle the top with some raw sugar mixed with cinnamon.
Bake for 25 minutes or until cooked. |
