Directions:
1) Slice very finely and fry bacon and onions in oil. Set aside and add cheese when cool.
2) Food process sundried tomatoes, parmeson olive oil and pepper.
3) Lay out four sheets of filo pastry at a time, and coat a third with bacon mixture, a third with spinach and a third with tomato pesto.
4) Roll tightly, and cut into 10mm thick discs.
5) Bake until golden |
