Directions:
Cakes:
1) Make muffin mixture
2) Put into 6 circular tins (used baked bean tins), and nestle a cube of cream cheese just protruding through the top of the mixture
3) Bake as normal
Garnish:
1) melt white chocolate and pour onto baking paper. Cut into rectangle 30mm wide, taller than the "cake"
2) Heat juices from all and rinds from half of the oranges with sugar. Cool
3) Whip cream
Assembly:
Assemble gateaux and garnish |
Lemon muffins (
Required ) :
| 1.00 c | flour   | 2.00 tsp | baking powder GF   | 0.25 tsp | salt   | 0.50 c | sugar   | 50.00 g | butter   | 0.50 | egg   | 0.25 c | milk - blue   | 0.50 | orange (ea)   | 0.50 | lemon (ea)   | 50.00 g | cream cheese   |

Directions:
1: Mix flour, baking powder, salt and 3/4 of the sugar.
2: Combine melted butter, egg and milk being careful not to over mix. Grate the coloured rind of the orange and lemon. Squeeze the juice of the orange.
3: Lightly mix all of the above together.
4: Spoon into dish.
(optional)
Add cubes of cream cheese so that it is just poking out of the top.
5: Bake at 200 degrees for 12 minutes.
6: Mix lemon juice and remaining sugar and glaze when hot. |
