Directions:
Pour milk into a heavy based pan and heat gently (or do in microwave)
2. Add cardamom pods (if making a big quantity, can tie them inside some cheesecloth or a popsock) and rice to the milk.
3. Slowly bring to the boil then lower the heat and simmer rapidly, stirring from time to time to prevent the rice from sticking to the bottom of the pan. Simmer, stirring occasionally until the milk is reduced by about half- it may take up to 1 1/2 hours.
4.Remove and discard the cardamom pods. Add sugar and check for sweetness. add pistachios.
5. Transfer into a covered container and store in the fridge at least 4 hours or overnight.
6. Serve. |
