Directions:
DAY BEFORE BAKING:
Make up tea with boiling water and soak fruit in hot black tea overnight.
NEXT DAY: Heat oven to 180 C.
Beat one egg with 110gm dark soft sugar.
Stir in flour, fruit and enough liquid to make a soft mixture.
Pour into greased loaf tin.
Bake approx 45 min or until skewer comes out clean.
Turn out when cool, and serve sliced with butter. |
