Directions:
1. preheat oven to 160 deg C
grease deep 23 cm square or 20 cm diameter tin; line with baking paper
2. Soften butter well.
3. sift dry ingredients into large bowl; add remaining ingredients. beat mixture on medium speed until mixture is smooth and changed to a paler colour.
4. bake cake in moderately slow oven for about 1 hour 20 mins. Stand cake 10 minutes, turn onto wire rack, turn top-side up to cool.
