Directions:
1. Wash quinoa thoroughly, drain and bring to boil with 2:1 water (or cook in rice cooker, or microwave)
2. Simmer for 15-20 minutes
3. Drain immediately.
4. Rinse with cold water. Re-drain.
5. Mix dressing ingredients together.
5. Finely chop parsley, green onion,and tomato.
6. Slice sundried tomatoes and olives (can just rip olives in half)
7. Add all ingredients to dressing and mix together well. |
