Directions:
If there is no prepared dressing, then make one up using 1 part balsamic vinegar, to 3 parts extra virgin olive oil, some salt and pepper. Shake or whisk together.
Spread the rocket on a platter.
MAKE A SEPARATE SALAD FOR NUT AND DF PEOPLE
Cover rocket with drained mandarins and chopped baby beetroot. and a little vinaigrette. Sprinkle with thyme.
Put nut free DF salad aside and label.
Top main salad with walnuts and feta*.
Serve with extra vinaigrette on the side for people to add if they wish.
