| | | Ingredients: | | 1.00 tbsp | vegetable oil   | 1.00 diced | brown onion (ea)   | 1.00 tsp | garlic (cloves)   | 250.00 g | beef mince   | 2.00 tsp | cumin   | 1.00 tsp | oregano   | 1.00 400g tin - mild | chilli bean mix   | 600.00 g | corn chips (GF DF)   | 100.00 g grated | Tasty cheese   | 100.00 g | sour cream   | 0.20 shredded | lettuce   | 2.00 diced | tomato (ea)   | 0.50 tsp GF | Tabasco Sauce   | 1.00 | Red Pepper (Capsicum)   | |
Directions:
Heat oil in large pot, add the chopped onion, garlic and minced beef and cook over fairly high heat until browned. Dice the pepper and add it to the pot with the pices and cook for a further 2 minutes. (For large quantities, do this on the bbq or in the bratpan, then transfer the mix to a pot).
Reduce the heat, add the remaining ingredients, including the liquid from the beans, and simmer for about 10-15 mins, stirring occasionally to prevent sticking and adding extra water during the time if necessary.
Serve the remaining ingredients on the side. |
