Directions:
Preheat oven to 160 C. Grease a loaf tin.
Place eggs, sugar and oil in food processor and process until pale and creamy.
Add bananas and vanilla and process until well combined.
In a separate bowl, thoroughly mix the baking soda and flour together. Add to banana mixture and pulse until combined (make sure there are no lumps of flour).
Pour into tin. Bake 30-50 minutes until skewer comes out clean. Allow to cool 10 minutes before turning onto a rack.
NOTE: This keeps well in gladwrap in fridge for up to 5 days and freezes well.
