Frittata - leek, mushroom & gruyère |

Directions:
Preheat oven to 190°C. Spray a shallow baking pan, line with paper.
Boil potato, drain, cool, slice.
Heat a little oil in a large frying pan over medium heat. Add leeks and cook, stirring occasionally, add mushrooms after 5 or so minutes,continue for another 5 minutes or until soft.
Spread potato slices, leeks and mushrooms evenly over the pan.
Whisk eggs, salt and pepper together in a bowl. Pour over mushrooms and leeks, sprinkle grated cheese over
Bake for 20 - 30 minutes or until golden and set in the centre.
Cut frittata into wedges. Serve with salad
