Directions:
Preheat oven to 190°C. Spray a shallow baking pan, line with paper.
Heat a little oil in a large frying pan over medium heat. Add leeks and cook, stirring occasionally, for 10 minutes or until soft.
Spread them evenly over the pan. Break salmon into large chunks and arrange over leeks. Be careful to discard the spine bones.
Whisk eggs, dill and salt and pepper together in a bowl. Pour over salmon and leeks.
Bake for 20 - 30 minutes or until golden and set in the centre.
Cut frittata into wedges. Serve with salad
