Directions:
roughly 1 cup grated tasty = 115 grams
1. Heat oven to 180°C
2. Grate the cheese.
3. Finely chop chives.
4. Beat the eggs, set aside.
5. Sift dry ingredients into a large bowl, mix in cheese and chives.
6. Make a well in the centre and add the beaten eggs and milk. Mix until it is just combined - be careful not to over mix.
7. Spray muffin tins with cooking spray.
8. Spoon mixture in the tins, fill to 2/3 full. Sprinkle with pumpkin seeds if using.
9. Bake for 20 minutes - check - they are done when golden brown and a skewer inserted into the centre comes out clean.
10. Remove from tins and leave to cool slightly
11. To serve, cut all on the diagonal, fill some with ham, some with a teaspoon of pesto or relish, some with real butter |
