Directions:
- Preheat oven to 200°C and line trays with baking paper
- Using clean hands combine sausage meat, half the relish, thyme, grated parmesan, finely chopped rosemary, S&P in a large mixing bowl
- Roll pastry to 30 x 12 cm rectangles
- Shape meat into a log 30cm long, lay in the middle of the pastry
- Paint a line of egg wash alone the edge of one of the long sides of the rectangle
- Fold pastry over meat using egg wash as seal, turn over so the seam-side in underneath
- Brush with egg wash
- Cut into 3cm pieces and arrange on tray
- Bake for 15 minutes until golden
- Use the remaining relish to serve |
