Directions:
Base
1. Roll out Pastry - prick all over. Bake 220 for 10 mins
Filling
1. Mix Cornflour, sugar and lemon juice until smooth. Add water.
2. Stir over medium heat until thick
3. Cool slightly
4. Separate egg whites and set aside for topping. Whisk thru egg yolks and butter
5. Pour onto base and refrigerate for 1 hour until firm

Directions:
1. Separate eggs whites and use with leftover egg whites from filling.
2. Beat egg whites
3. Add sugar until thick and glossy
4. Pile on top of lemon mix and bake 160 for 5 mins |
