Directions:
Combine softened 3/4 of the butter, tarragon, parsley and mustard. Set aside.
Remove chicken skin and half breasts. Dust with seasoned flour.
Add remaining butter and small amount of oil - brown chicken until golden.
Remove from pan and allow it to get cold.
Use 2 sheets of filo for each piece of chicken.
Brush filo with oil - place chicken in middle and spread with tarragon/butter mix. fold up parcels.
Place on greased oven trays and brush with Oil. sprinkle with sesame seeds if desired.
Bake in moderately hot oven 10 mins then reduce heat to moderate and bake a further 15-20 mins |
