Directions:
1) Warm the cream and vanilla bean together until just scalded.
2) Separate the eggs (whites not necessary). Beat egg yolks and sugar together until pale.
3) Scrape the seeds from the vanilla bean into the cream.
4) Stir the egg mixture into the warmed cream mixture.
5) Strain the mixture into a double boiler and place over simmering water, stirring continuously until the mixture thickens, about 15-20 minutes.
6) Pour into individual serving dishes. Chill well.
Optional:
sprinkle the tops with a layer of sugar and caramelise the sugar with a cook's blow torch. |
