Directions: Put water onto boil. If making a large quantity of mashed potato then it is better to divide into several smaller pots, as it is easier for to handle for draining and mashing. Peel potatoes and chop into large cubes (about 3cm). Add salt to the water and cook potatoes in salted water. Drain potatoes into large colander. Start mashing potatoes. Once the potatoes are partly mashed add the olive oil
