Directions:
Cook sushi rice in rice cooker.
Heat vinegar, salt and sugar together until sugar is dissolved. Add to the hot rice and mix well.
Transfer rice to a tray and spread out to cool.
Refrigerate until needed.
Mix the chopped chicken and mayo together.
Finely slice or dice vegetables -capsicum, cucumber, carrot.
TO ASSEMBLE:Put 2/3 cup of rice in the bottom of the tray.
Then, chicken mixture.
Then top with the chopped vegetables and a sprinkle of toasted sesame seeds.
Fill pottles with 1 Tbsp soy sauce. |
