Directions:
Take butter out of fridge asap to soften at room temperature.
Oven 180 C. Cooking time will vary depending on size of the slice and whether using frozen fruit.
Cream butter and sugar
Add egg and vanilla and beat well.
Mix in dry ingredients.
With Floured hands, pread 2/3 the pastry into a lined tray.
Top with the drained fruit [tinned apples and thawed frozen berries)
Dot remaining pastry over the top to cover the fruit
Bake until top is golden brown and crisp check after 40 minutes and then every 10 minutes
NB this will take longer to cook with a larger quantity - very easy to undercook. Better to make 2 thinner shortcakes than one thick one.
