Directions:
Heat oil and fry mince and mexican spice together over medium high heat until browned and cooked through.
Drain of fat and keep warm. Set a small amount aside if desired for fussy eaters.
Drain and rinse black beans and corn.
Crush corn chips.
Prepare vegetable elements. (set some lettuce, tomato, corn and cheese aside for fussy eaters if desired), and mix together in a large bowl.
Add beans, corn and cheese.
Mix salsa and sour cream together as dressing.
Add dressing to vege/bean/cheese bowl and mix.
Put in serving dish and top with warm mince and crushed corn chips.
Serve jalapenos/hot sauce on the side
