Directions:
Chop dates and soak for a few minutes in boiling water. Drain.
Zest the lemon and squeeze the juice.
Place nuts, dates, chia seeds, coconut in a food processor and blend until it begins to look like fine bread crumbs.
Add lemon zest and juice and blend to the desired consistency. Add an extra Tbsp water or lemon juice if mixture is too dry.
Roll spoonfuls of the mixture into small balls, and roll in coconut if desired. Store in fridge.
