Directions:
Oven 200deg
Cut vegetables as desired.
Roast veges in olive oil and half of honey until tender and a wee bit charred around the edges.
Toast walnuts (in pan or oven) and chop roughly
Remove skin and dice oranges into chunks.
Chop parsley or greens
Mix all dressing ingredients together and season to taste with salt and pepper. Mix quinoa and dressing together.
Just before serving, add veges, oranges and herbs. Top with walnuts.
