Directions:
Heat oil in large pot, add the minced beef and cook over fairly high heat until browned. Dice the celery and add it to the pot with the spices and cook for a further 2 minutes, adding the salt and pepper.
**Remove 1/3rd portion and keep separate**
Reduce the heat, add the cumin, oregano, chilli powder & diced canned tomatoes, and simmer for about 10-15 mins until liquid has reduced, stirring occasionally to prevent sticking.
While this is cooking, slice the lettuce & tomato, and serve on the side. |
