Directions:
Heat oil in large pot, add the chopped onion and garlic, and cook over fairly high heat until translucent. Dice the celery and add it to the pot with the spices and cook for a further 2 minutes. (For large quantities, do this in a large frypan or bratpan, then transfer the mix to a pot).
Reduce the heat, add 2/3s of the diced canned tomatoes and simmer for about 10-15 mins or until liquid has reduced, stirring occasionally to prevent sticking. Add more tomatoes if needed to prevent sticking or if the liquid has evaporated quickly.
15 mins before serving add the chilli beans (including their liquid), stir through and heat.
Serve the remaining ingredients on the side. |
