Bacon & egg "Mcmuffins" (DF & vegetarian) - Campus 2020 |

Directions:
1. Arrange bacon on a baking sheet fitted with a wire rack. Bake in 220º oven for 15 minutes.
2. Spray muffin pans with nonstick cooking spray. Add a fresh egg in each cup of the muffin pan and bake for 10 minutes or until set and easily remove from tins once cooled a bit.
3. Cut GF rolls in half and place onto a baking tray and bake for 5-10 minutes or until lightly toasted.
4. Assemble the "mcmuffins":
- On 3 half-split place one slice vegan cheese, one baked egg, and one slice of bacon (folded in half if required), then put the other half roll on top.
- On 1 remaining half-split place one slice swiss cheese, one baked egg and top with another slice of swiss cheese, then put the other half roll on top.
Wrap each in foil and arrange in groups for campers to take back to holiday homes.
For reheating: heat for 10-15 mins at 180 deg in an oven, or 40-60 seconds in a microwave (foil removed).
