Directions:
1. Heat oven to 180 deg C.Cut chicken thighs in half if large (approx >100g ea).
2. Pat dry chicken pieces. Put oil in a bowl. In another bowl, mix together the breadcrumbs, flour, sage, oregano, paprika, salt and pepper. Line large metal oven trays with baking paper.
3. Turn the chicken pieces first in the oil, then in the breadcrumb mixture (light coating is sufficient). Refrigerate coated chicken until ready to bake (this can be done the morning beforehand). Spread the chicken pieces on the prepared baking trays.
3. Bake chicken pieces for 1 hour, or until golden and cooked. Serve piping hot. |
