| | | Ingredients: | | 4.00 tsp | gelatine   | 83.00 ml cold | water   | 375.00 ml | cream   | 375.00 ml | milk - blue   | 0.50 c white or caster | sugar   | 1.00 tsp | Vanilla essence   | 2.00 c | frozen mixed berries   | |
Directions:
in a small bowl, combine gelatin with cold water and leave 5 minutes or so to swell.
Meanwhile, combine cream, milk, sugar and vanilla in a medium sized saucepan and heat gently over low to medium heat, until it just starts to simmer. DO NOT LET IT COME TO THE BOIL.
Add swollen gelatin to the hot milk mixture and whisk gently until well combined and all the gelatine has been dissolved.
Pour mixture into a jug (for easier pouring and less mess (wastage)
Carefully pour the mixture into serving glasses, teacups or gr4eased moulds, dividing equally. Place in fridge for at least 4 hours or until set with a slight wobble in the centre.
Tip berries into a small pot with a splash of water and 1-2 tsp sugar or honey. Simmer for 5 minutes until syrupy.
