Directions:
For dip:
Grate carrots. Place all ingredients down to parsley (except salt and pepper) in a food processor and process to make a smoothish, spreadable dip. Season with salt and pepper to taste. Thin as desired with extra oil or water, and present in a small bowl dressed with a drizzle of olive oil.
Cut cucumber and celery into sticks and arrange around dip along with crackers. |
