Directions:
A day or two before, cook chicken breast.
Oven 180 degrees
Place in single layer in baking tray. Drizzle with some olive oil and season well with salt and pepper.
Bake for around 30-40 minutes until cooked.
Cool and refrigerate before slicing for rolls.
Wash lettuce.
Slice tomatoes and cucumbers.
Slice rolls almost through.
Spread both halves with dairy free spread.
Fill all with lettuce, 1 slice tomato, 1 slice cucumber.
Divide Rolls into 3.
1/3 rolls ham, swiss cheese and dijon mustard.
1/3 Chicken, brie and cranberry sauce.
1/3 roast beef, cheddar cheese and caramelised onion relish
