Directions:
Cover the cashews with boiling water and let soak 8 hours or overnight.
Make the crust by combining dates, almonds and a pinch of salt in a food processor until fine crumbles form. If mixture is too dry, add 1 Tbsp water. Press the crust into a lined springform tin, or into silicon muffin tins. Freeze until ready to use.
Next day- Combine all filling ingredients in high quality food processor or blender for 6-7 minutes until well mixed. Pour into prepared crust and freeze.
Thaw 15-20 minutes prior to serving. |
