Directions: Preheat oven to 180 degrees. Line lamington tin with baking paper. Crush weetbix and mix with other dry ingredients. Melt spread, add vanilla essence then mix through dry ingredients. Press into tin and bake for 18-20 minutes. Ice with chocolate icing and sprinkle with extra coconut, then cut into squares while warm.
