Directions:
Turn slow cooker to High to preheat.
In a frying pan, brown mince well then add to slow cooker. Then saute onion and garlic, add to slow cooker.
Add tomatoes, and vegetables to slow cooker and any herbs/spices you want and stir well.
Cook on Low for 6-8 hours
Meanwhile, cook pasta until al dente, drain and cool and drain.
About 10 minutes before serving add cooked pasta and heat through. Season and sprinkle with vegan cheese before serving.
