Directions:
Finely chop veges in a food processer or by hand.
Turn slow cooker on high and put boiling water and bacon hock into it.
Add soup mix and stir well. Then add finely chopped vegetables one at a time.
Cook on high for 6 hours, then check to see if soup mix is tender.
Take out the bacon hock. cool, then pull off the good meat, chop, and add back into the soup.
Cook 2-3 more hours, then adjust the seasonings and stir in parsley. If too thick thin down with water or stock. Serve.
