Directions:
Place pork in a slow cooker and empty all BBQ sauce over it. Replace lid, switch to low. Cook 8 hours.
Combine cabbage, apple, carrot and mint in a salad bowl.
In a separate jug combine mayo, mustard and lemon juice. Add to vegetables and toss well. (Slaw can be made ahead of time and will keep well. Dress immediately after grating apple to prevent browning).
Remove pork from slow cooker and using two forks pull the tender pork apart.
Serve the pork and slaw together inside buns (or let people make up their own). |
