Directions:
1. Combine eggs, sugar, oil, vanilla and dry ingredients.
2. Beat till smooth.
3. Stir in carrots.
4. Put in tin.
5. Bake at 180C for 45-50mins.
6. When cool ice with cream cheese icing.
Cream Cheese Icing
1. Beat softened butter and cream cheese until smooth.
2. Beat in lemon rind and icing sugar. |
