Directions:
Toast the sunflower seeds either in a pan on the stove. stirring constantly, or in 180C oven for 5 minutes.
Spread the rocket on a platter. Cover with drained mandarins and drained chopped baby beetroot. Sprinkle with thyme, sunflower seeds and feta*.
Serve with vinaigrette on the side for people to add if they wish.
* Leave feta off for a DF option. |
